    So you poached the salmon in the sauce, could I also pan sear it in advance
    and then let it cool, cut it up and add it to the sauce at the last moment?
    I’m so gonna try this recipe, but why is frozen salmon better than fresh
    salmon? :)

    Ha perfect! I have a leftover samon filet and leeks from yesterday and was
    looking for a recipe.
    EDIT: Just made this. Super easy, super fast, and I had to stop myself from
    ‘tasting’ because this is delicious. The heat from the cayenne, the white
    wine, the zing from the mustard and terragon… love it! The only thing I
    didn’t do is use crème fresh because we only had cream. And I forgot the
    parsley.
