Stéphane, thanks so much for these amazing videos! You do a wonderful job of explaining everything in a way that is both detailed but also easy to follow. It is fascinating to watch you make all of these great dishes, and I have really learned a lot from your posts and videos about French cooking. Keep up the great work!!

You screwed up and you know it.
The tomato paste goes BEFORE the stock so you cook the bitterness out.
Lame. Just talking with accent doesen make you a good cook. Lame

Would you consider grating the vegetables for your stock to extract more flavor and speed up the stock making step? You strain it anyway, so appearance is irrelevant.

Merci! This is a great classic, done very well. However, I would appreciate a time for the whole dish, from start to finish. How long did it take? It does not seem to be a dish one can make quickly.

What about the vegetables and chicken meat left from the stock? Would they be thrown away? If so, it would be a very big wastage!

Lol, love this. "I like making my own stock from scratch…. add store brought stock…" Not saying he did anything wrong. Just not making the stock from scratch, that's all. Good video.

Nice recipe. I will take shortcuts. Will not use veal broth. Will use water. Will not be tying up celery with string. Will just drop it in. I think i will use my pressure cooker for all of it starting with the brown stock. Make it a one pot dish. I am lazy and do not like dirtying all those pans. This dish is amazing. Thank you.

Great video and recipe. Is it just me or was there no mention of seasoning? No salt to sweat the vegetables and no salt on the sauteed chicken.

Technical issue or not this is without doubt the best cooking video I have ever seen. Thank you very much. Definitely going to make this.

Is it just as good to make the "quick" stock in a Dutch oven or does a SS stock pot give you a better result? Thanks for the video Chef, you've inspired me!
