    Great video. Tried to make these last night, but couldn't get that nice crispy brown. You didn't mention the prep of the scallops; should I have dried them off before placing them in the pan? Also, how do you know when the pan is hot enough? That could have been an issue as well. Thanks!

    If I don't have white wine, can I use alcohol (antiseptic 90%)? Of course I'll dilute it (down to like 20%).

    Beautiful sear on those Scalllops nice work friend. The key to getting a good sear is having a very hot pan and for the Scallops to be dry.

    The best Pan Seared Sea Scallop video/recipe on the Net!  Great tip on using the roasted garlic instead of 'fresh'.  If they ever come up with awards for cooking videos, this deserves Top Honors.
